This recipe is pareve.
Ingredients:
5 cups of washed and cut kale (see link above for suggestions)
1/4 cup of mayonnaise or miracle whip (we use both in our house for nostalgia)
3 tbsp. of lemon juice
1-2 garlic cloves, minced (I like lots of garlic, some people don't)
Dill (fresh or dried)
Directions:
1. In a bowl, mix mayonnaise, lemon juice and garlic together until smooth. (Some mayonnaise - the kosher kind - tends to take longer to blend. Use a fork and whip if necessary).
2. Add dill to mixture and mix.
3. Adjust mixture as necessary to taste. (Aka. add more of any ingredient as you see fit!)
4. In small quantities, pour over kale and mix until all kale is dressed to preference.
Serves 4-6. Adjust and play with this recipe until it works for you. Add nuts, seeds or croutons if desired. Makes a great side for chicken fingers or breaded fish.
