This recipe is pareve but can be made with dairy.
Ingredients:
1 package of original Yves Ground Round (available at all grocery stores)
1 can of diced tomatoes
3 cups of green peas, corn and diced carrots carrots (frozen, canned or fresh)
1 can of black beans (or preferred variety of legume)
1 cup of uncooked brown rice
1 whole onion (red or white), diced
1/2 cup of soup stock (chicken flavour or vegetable)
All spice and/or salt and pepper to taste
Optional Garnish-sour cream, shredded cheese or yogurt and chopped green onions (this makes the recipe dairy)
Directions:
1. In a large pot, combine ground round, tomatoes, peas, corn and carrots, beans, onion and seasoning. (If mixture seems too dense, add more soup stock and/or water).
2. Bring mixture to a boil and then reduce to a simmer and cover for at least 1 hour, stirring occasionally.
3. In a smaller pot, cook brown rice as directed on packaging.
4. Once rice and vegetable mixture are finished cooking, combine rice into large pot and stir until mixed thoroughly.
5. Serve into bowls and if desired, add sour cream, shredded cheese or yogurt and green onions.
Serves 6-8.
