This is a great summer soup. Can be served cold or hot (but really good cold), a great recipe that can be used all year round!
This recipe is pareve.
Equipment:
Large Pot
Food Processor
Large Mixing Bowl or Pot
Ingredients:
1 1/2 cups of water
1 can or equivalent of diced tomatoes
1 small or 1/2 large red onion
1-1/2 cups of celery cut into pieces
1-1/2 cups of carrots, peeled and cut into pieces
2 cloves of garlic minced
1/4 cup of chicken soup flavouring (I use an all natural pareve Chicken consume)
Basil or Oregano to taste (based on preference and/or availability)
Salt and pepper to taste
Directions:
1. In your large pot, combine all the ingredients.
2. While keeping the pot covered, bring the mixture to a boil, stirring occasionally. Let boil for up to 5 minutes. Lower heat and let simmer for 1 hour. Remove from heat and let cool. For best results, let sit in the fridge overnight so that the flavours have more time to blend.
3. Using the food processor, blend the mixture until all the vegetables have been sliced into particles. You may need to do this in stages if your food processor is not big enough. If so, use a separate large bowl or pot to mix the blended mixture together.
Makes 6-10 servings. Serve hot or cold.
