I tried these out as a heartier and healthier option for the traditional waffle. They're sweet, without the sugar and soft and fluffy. These are amazing as part of a chicken and waffles dish (picture above, recipe below).
This recipe is pareve. I highly recommend trying it with meat :).
Equipment:
Large Mixing Bowl
Waffle Iron (preferred) or Grill Pan
Ingredients:
1 cup of whole wheat flour
1 cup of sweet potato peeled and cubed
1/2 cup of applesauce
2 large eggs
1/4 tbsp of cinnamon
Salt and pepper to taste
Directions:
1. Boil sweet potato cubes until they are fully cooked.
2. Mash sweet potato until it is smooth and then add applesauce and eggs. Mix until smooth.
3. Add flour, cinnamon and salt and pepper and continue mixing ingredients all the way through.
4. Warm up your waffle iron and coat with butter or margarine. If you are using a grill pan, please click here for directions on how to make waffles on a grill pan.
5. Scoop mixture onto waffle iron and even out with a knife. Make sure not too put too much mixture in as it will spill out the sides and become garbage.
6. Cook your waffles to your preference and instructions on your waffle iron. They should be a little overcooked to ensure the outside is crispy and the inside stays soft.
Makes 3-5 servings. Top with your favourite ingredients like schnitzel, turkey bacon or maple syrup.
